| Boil potatoes. Cool and put through ricer/food mill |

| Sprinkle flour with one hand and knead the the other until elastic, smooth dough ball forms. |

| Silky dough ball.  Cut into smaller pieces and roll into ropes  |

| Cut ropes to what ever size you want. |

| Put gnocchi in the palm of your hand and  roll a fork over to make a pretty pattern.  |

| Boil a few minutes in salted water and serve with sauce and grated cheese.  |
