Boil potatoes. Cool and put through ricer/food mill Sprinkle flour with one hand and knead the the other until elastic, smooth dough ball forms. Silky dough ball. Cut into smaller pieces and roll into ropes Cut ropes to what ever size you want. Put gnocchi in the palm of your hand and roll a fork over to make a pretty pattern. Boil a few minutes in salted water and serve with sauce and grated cheese.
