Bread Baking

Since we are trying to incorporate more whole grains into our diet, and since I have a cupboard full of whole wheat flour, I decided to start baking bread. This is probably the first loaf I've made in 10 years. Bread baking, like all else it seems, is a work in process. I made these with whole wheat and spelt flour. They turned out pretty good. We have been eating the quinoa/flax seed bread from Whole Foods lately, and in comparison, these were lacking a bit in flavor, but yummy, none the less.
