Chocolate Zucchini Bread

Hoping this turns out more like a cake...based on the recipe from The Joy of Baking.com. With the following mods...
  1. no sugar. Used 1/4 c Stevia in the Raw and 1/2 c. sprouted barley malt.
  2. felt compelled to add 1/2 tsp. instant coffee
  3. didn't measure the zucchini, just used a small.
  4. Used unsweetened carob chips instead of choc. chips.
  5. Used spelt flour.
